Tomato, Fennel and Leek Frittata with Smoked Salmon

Serves 6 (nutritional info based on 6 servings)
1 Lag Tomato sliced/chunked
1 bulb of Fennel (tastes like black licorice)
2 leeks, whites only (tastes like a mild onion)
1 large orange or yellow sweet pepper
4 ounces of Smoked Salmon
½ cup Egg Beaters OR 3 whole eggs & 3 egg whites whisked
2 ounces of Goat Cheese
½ cup Cottage Cheese (I use Light ‘n Lively)
2 handfuls of spinach or whatever greens you want to use
salt and pepper
1 tablespoon of Olive Oil
Pre-heat your oven to 350 degrees
Put olive oil in (oven proof) Large skillet; add leeks and fennel and saute for 1 minute. Add pepper and saute for
1 more minute. Add tomatoes and Smoked Salmon then the greens. Saute for another minute or so.
Lower the heat on your stove and add the Egg Beaters or your whisked eggs.
DO NOT STIR the eggs, just let them sit between 3 to 5 minutes cooking very slowly.
Move pan to oven and bake for 10 minutes or so.
REMOVE and let sit for a few minutes BEFORE you slide your Frittata out of the pan.
You can change this recipe up by adding different combos of veggies and cheeses. Some people don’t like
smoked anything or don’t like salmon, so leave that out.
