Suanne's CRUSTLESS Smoked Salmon & Dill Quiche

Ingredients (Makes 6 servings)
16 ounce Egg Beaters
1/3 cup 1% milk
1/2 cup bruschetta (I use a jar of Bellino from the store if I don't have my own made)
4 ounces smoked salmon broken into chunks
2 tablespoon chopped dill
4 Scallions sliced thin
2 piece sun dried tomato sliced into thin strips
4 ounces goat cheese

Directions
1. Spray Quiche pan with vegetable spray
2. In a bowl...pour in the egg beaters, milk, scallions, chopped dill, bruschetta, sliced sun dried tomatoes, salt
and pepper.
3. Break up Smoked Salmon into chunks and lay in pan. Pour egg mixture over smoked salmon.
4. Add goat cheese at the end. Drop pieces of goat cheese all around the quiche evenly.
5. Bake at 350 degrees for 45 minutes or so till quiche is set

Great quiche to take to brunch.
