Suanne's Shrimp with Pesto over Angel Hair Pasta
MY SIGNATURE DISH and my own recipe

This recipe may serve 2 at my house...
but the NUTRITION FACTS are for 4 servings

1 pound of raw shrimp peeled and deveined
Large handful of baby spinach chopped just a bit
1 cup grape tomatoes sliced in half
¾ cup black olives sliced in half
3 large cloves of garlic chopped in chunks
½ cup crumbled Feta cheese
2 to 3 tablespoons of pesto (homemade or store bought)
1/3 cup of pine nuts or just a few spoonfuls….whatever you like
1 tablespoon of olive oil
Salt and pepper to taste
Angel hair pasta

Sautee garlic in olive oil about 1 minute, add pesto, and shrimp and cook till shrimp starts to
turn pink on one side.

Add black olives and tomatoes, Feta cheese and  spinach.  Stir and add pine nuts.

SERVE OVER ANGEL HAIR PASTA….you can put more feta on top if you like.

This recipe cooks up really fast so have your pasta done before you start to cook the shrimp.  
Reserve pasta-cooking water to re-wet the pasta if it’s sticking together.  Do not use water to
rinse the pasta...you want your pasta “starchy” so the sauce sticks to the pasta.
