TAILGATE RICE & BEANS, Suanne's version

Ingredients (SERVES 12)
1 ½ cups white rice
15 ½ ounce black beans
15 ½ ounce white beans
1 large yellow pepper (3 3/4” long x 3” diameter)
1 large red pepper
1 large onion
1 roasted red pepper
½ cup black olives
4 ounce Bruschetta
Directions
1. Pre cook rice
2. Cook Peppers and Onions in vegetable spray 3 to 5 minutes leaving them CRUNCHY
3. Add Black and White Beans
4. Add chopped Roasted Red Pepper (1 large in a jar)
5. Add sliced BLACK Olives
6. Add White & Black Beans
7. Add Cooked Rice
8. Add BRUCHETTA...if serving next day, add more to moisten
9. SERVE HOT or COLD....
This is always requested from me at all tailgates and I always take it COLD.
