Suanne's Crustless Asparagus & Spinach Quiche
Ingredients (Makes 6 servings)
16 ounces Egg Beaters
2 tablespoon low fat sour cream
1 tablespoon salt
2 1/2 tablespoon 1% milk
1/2 teaspoon nutmeg
2 cup spinach chopped
8 asparagus spears washed and either layered whole or cut on the diagonal
3/4 cup shredded swiss cheese
Directions
1. Spray Quiche Pan with Vegetable Spray
2. Chop Spinach and put in Quiche Pan
3. Wash/Trim Asparagus Spears and lay in pan
4. In bowl, whisk Egg Beaters and other ingredients together then pour over spinach and asparagus.
5. Bake at 350 degrees for approx 45 minutes till Quiche is set.
